Bobby's Beef Brisket Chili

Serves 10

Ingredients:

  • 1 can Mrs. Grimes no salt added black beans, drained
  • 1 can Mrs Grimes no salt added chili beans, drained
  • 1 can Mrs. Grimes no salt added kidney beans, drained
  • 1 pound beef brisket (can use any other smoked meat as substitute)
  • 2 cans no salt added diced tomatoes
  • 2 fresh diced tomatoes
  • 1 green bell pepper
  • 1 diced onion
  • 6 ounces mushrooms (optional)
  • ¼ cup unpacked brown sugar
  • 1 square unsweetened Baker’s Chocolate
  • 1 habanero, finely chopped
  • 1 cup reduced sodium V8
  • 1 teaspoon cumin (add more to taste)
  • 1 teaspoon crushed red pepper (add more to taste)
  • 1 teaspoon chili seasoning (add more to taste)

Directions:

  1. Combine all ingredients. Simmer a minimum of six hours. Place in fridge overnight.
  2. Simmer another six hours the next day. Add water while simmering to obtain desired consistency.
  3. Serve.

Calories: 348, Fat: 16g, Carbohydrates: 16g, Protein: 9g
