Bruschetta Stuffed Baby Portabella Mushrooms
Ingredients:
- 18 baby Portabella mushrooms (usually come in packs of 6)
- 4 on-the-vine tomatoes
- 2 avocados
- 2 Tbsp capers
- 1/2 yellow pepper
- 1/2 red pepper
- Olive oil
- balsamic vinegar
- honey
- fresh basil
- kosher salt
- crumbled feta cheese
Method:
- Wash desteam and degill (scrap out the black gills on the underside of the mushroom) Portabellas. Place the mushrooms on a baking sheet lightly coated with olive oil. Sprinkle with kosher salt and roast at 475 degrees for about 10 minutes on each side
- While mushrooms are roasting, dice tomato, avocado, red and yellow peppers (approximately same size). Combine in mixing bowl with capers.
- Lightly drizzle tomato mixture with olive oil, balsamic vinegar and honey.
- Chop fresh basil and add to mixture. Gently toss together and spoon into the roasted portabella caps.
- Sprinkle with crumbled feta and serve.
