Debbie's Chicken Chili

Serves 8–10

Ingredients:

  • 2 cups Bob’s Red Mill 13 Bean Soup Mix
  • 2½ quarts water
  • 4-6 chicken breasts (boneless, skinless, cooked, sliced into large pieces)
  • 1 onion, diced and sautéd in small amount of butter
  • Garlic (you decide how much), chopped and sautéd with above listed onion
  • 1-2 6 ounce cans tomato paste
  • 2-3 14.5 ounce cans tomato sauce
  • 4-5 14.5 ounce cans diced seasoned tomatoes
  • 2-3 Bay leaves
  • Chili powder to taste
  • Black pepper to taste

Directions:

  1. Wash bean soup mix, then soak overnight.
  2. Drain beans, rinse and bring water to boil with the beans. Reduce heat and simmer 3 to 3½ hours.
  3. Add chicken breast pieces, sautéd onion and garlic, tomato paste, tomato sauce, seasoned tomatoes, bay leaves, chili powder, and black pepper. Simmer 30 minutes.
  4. Serve in a bowl.
