Debbie's Chicken Chili
Serves 8–10
Ingredients:
- 2 cups Bob’s Red Mill 13 Bean Soup Mix
- 2½ quarts water
- 4-6 chicken breasts (boneless, skinless, cooked, sliced into large pieces)
- 1 onion, diced and sautéd in small amount of butter
- Garlic (you decide how much), chopped and sautéd with above listed onion
- 1-2 6 ounce cans tomato paste
- 2-3 14.5 ounce cans tomato sauce
- 4-5 14.5 ounce cans diced seasoned tomatoes
- 2-3 Bay leaves
- Chili powder to taste
- Black pepper to taste
Directions:
- Wash bean soup mix, then soak overnight.
- Drain beans, rinse and bring water to boil with the beans. Reduce heat and simmer 3 to 3½ hours.
- Add chicken breast pieces, sautéd onion and garlic, tomato paste, tomato sauce, seasoned tomatoes, bay leaves, chili powder, and black pepper. Simmer 30 minutes.
- Serve in a bowl.
