Zucchini Apple Bread

Ingredients
- 1 1/2 cups whole wheat pastry flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon sea salt
- 3 teaspoons truvia
- 2/3 cup apple grated
- 1 cup zucchinni grated
- 1 egg
- 1/2 cup nonfat plain greek yogurt
- 1/4 cup raw honey
- 2 teaspoons vanilla
Method
Preheat oven to 350°F. Mist an 8x4 inch loaf pan with cooking spray. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg and salt; set aside. In a separate bowl, whisk together apple, zucchinni, egg, yogurt, vanilla, truvia and honey. Add wet ingredients to dry ingredients and fold until just combined. Spread batter into prepared pan and bake until goldren brown, 40 to 45 minutes.
